One of the most well-known and easiest low carb sides, Cauliflower Mash is a recipe every low carber needs to know. In place of mashed potatoes, it can become a very much used side dish to accompany all different proteins. It also has a good amount of butter to keep you full and satisfied.
One of the biggest complaints people make about Cauliflower Mash is that it can come out very soggy. For this reason I add a bit of coconut flour to mine to help soak up the moisture, but you can easily leave it out if you like. Cauliflower Mash can also be made various ways and you can change it up depending on what you like and the dish you are making. Additions can include things like cream, cream cheese, grated cheese, bacon, herbs, spices etc. I nearly always add and mix some grated cheese into mine.
Cauliflower Mash
Ingredients
- 1 head cauliflower
- 100 g butter
- 1 tbsp coconut flour
- salt
- pepper
Instructions
- Bring water to the boil in a large pot. Trim cauliflower and cut in half. Break into florets with your hands and place in the boiling water. Reduce heat and simmer for no more than 5 minutes.
- Drain into a colander and let it cool off for about 10 minutes. Return to pot and add butter. Mash cauliflower and mix in butter using a stick mixer.
- Add salt, pepper and coconut flour and stir through. Serve.
