Prawn Skewers

12 large shell on prawns 400 ml coconut cream 1 medium spring onion/shallot/scallion, sliced 1 Thai red chilli, sliced 2 tbsp fish sauce 2 kaffir lime leaves, finely sliced 1 lime, the juice 1 tbsp coconut oil
Combine all ingredients except prawns in a bowl or container and mix well. Add prawns and mix in. Cover and refrigerate 2 hours or overnight if time permits.
Thread prawns onto skewers. Heat coconut oil in a frying pan, fry prawn skewers for about 2 minutes on each side.
