Ingredients
12large shell on prawns
400mlcoconut cream
1mediumspring onion/shallot/scallion, sliced
1Thai red chilli, sliced
2tbspfish sauce
2kaffir lime leaves, finely sliced
1lime, the juice
1tbspcoconut oil
Instructions
Combine all ingredients except prawns in a bowl or container and mix well. Add prawns and mix in. Cover and refrigerate 2 hours or overnight if time permits.
Thread prawns onto skewers. Heat coconut oil in a frying pan, fry prawn skewers for about 2 minutes on each side.
