I have been wanting to make this recipe for over a year now, ever since I tried my first smoothie bowl last year. We were in Bali and I ordered the most awesome smoothie bowl, made with keto friendly ingredients and served in a large thick bowl sculpted and carved from ice!
While I wasn’t going to go to the trouble of making my own handcrafted ice bowl, I definitely wanted to make the smoothie bowl itself! There were a few higher carb items garnishing the smoothie bowl like goji berries and I immediately wanted to make a version that I knew I could eat all the things on it instead of picking them out.
This Low Carb Smoothie Bowl is made with only 4 ingredients, takes less than 5 minutes to make and is ready to eat instantly! It’s also packed full of nutrients and can serve as a quick and easy dessert, breakfast or as a main meal.
The Low Carb Smoothie Bowl is also highly adaptable meaning you can change the main fruit from blueberries to a different berry you like more, use different yoghurts, use different nut butters and vary up the garnishes on top. Coconut yoghurt would be great for a version that is dairy free and something like sunflower seed butter would be a great nut free sub!
When I first tasted the Low Carb Smoothie Bowl I felt it needed a bit more sweetness, especially as blueberries can often be quite tart, hence the addition of the stevia drops. But you can taste and adjust the amount of stevia, use a different sweetener or if it’s already sweet enough for you, leave the sweetener out altogether.
Low Carb Smoothie Bowl
Ingredients
- 60 g frozen blueberries
- 1 tbsp full fat Greek yoghurt
- 2 tsp almond butter
- 1-2 drops liquid stevia
- Optional garnishes such as more berries, cacao nibs, unsweetened coconut, chia seeds, chopped nuts etc.
Instructions
- If using optional garnishes, prep these first.
- Place all smoothie ingredients in a blender or food processor. Blitz until smooth, it should be a similar consistency to soft serve ice cream.
- Place in a bowl and top with any additional garnishes you like.
