This came about from two things, my son’s love of hamburger patties and our recent watching of the film The Meg (my son’s choice of course!). He expressed his wish for a super mega burger! So I kicked it up a notch and made it a Mega Bacon Cheeseburger with lots of yummy toppings.
Except for the bacon this whole Mega Bacon Cheeseburger is cooked and put together in the one cast iron skillet! If you don’t have a cast iron skillet you could always transfer the Mega Bacon Cheeseburger from a regular frying pan to a tray in the oven to finish it off.
This is a fantastic dish for kids because you can vary the garnishes and toppings and the salad you pair with it to suit their favourites. You can even do like my carnivore son and just eat the meat part although I highly recommend the toppings!
I wanted some green in the garnishes to contrast the beef, bacon and cheese and for toppings we used sour cream and Dijon mustard. All easy to find items that most people already have on hand at home and taste great together. You can serve this burger in the skillet, on a platter like we did as one giant burger for everyone to serve themselves or slice and put individually onto plates. Either way it will taste amazing and look impressive!
I was slightly concerned that the thickness of the burger meant it might not cook through, but after finishing in the oven it had cooked through nicely. The size of this burger means that although it is well cooked it stays nice and moist from the juices and the addition of the olive oil, while regular size burgers can be notoriously easy to overcook and dry out.
Mega Bacon Cheeseburger
Ingredients
- 1 kg beef mince/ground beef
- 2 eggs
- 2 tbsp olive oil
- salt
- pepper
- 1 tbsp butter
- 5 slices streaky bacon
- 4 slices tasty/cheddar cheese
- 2 large pickles, sliced
- 1 shallot, sliced
- 1 tbsp fresh chives, finely chopped
- 1 tbsp Dijon mustard
- 1 1/2 tbsp sour cream
Instructions
- Preheat oven to 200C. Cook bacon in a single layer on a tray in the oven approximately 10 minutes or until cooked to your liking. It will go back into the oven once you put the burger together so don’t crisp it too much. Reduce oven to 180C.
- Combine beef, eggs, olive oil, salt and pepper in a large bowl and mix together with your hands until well combined. Shape into a rough ball.
- Heat cast iron skillet until hot then add butter until melted and foaming over medium heat. Add your beef and spread and press into a burger shape to fill the bottom of the skillet. It’s a good idea to use the back of a large metal or wooden spoon to keep from burning your hands.
- Cook for approximately 5 – 10 minutes pouring out the liquid every now and then that will build up in your pan. You will notice the burger shrink noticeably also. Remove from the heat. Cover with a large plate or similar. Quickly but carefully, flip the cast iron skillet upside down onto the plate and remove so your burger is now on your plate cooked side up. Return the skillet to the heat and slide the burger off the plate and back into the skillet. Repeat previous steps to cook on the other side.
- Remove from the heat again and top with your bacon and then your cheese slices. Place the whole skillet into the oven and cook another 5-10 minutes until cheese is melted and golden.
- Top with sliced pickle and sprinkle with shallots and chives. Top with sour cream and mustard and serve with salad of choice.
