Okay, so first of all let’s just clarify exactly what this KFC Keto Fried Chicken is! This KFC Keto Fried Chicken tastes a lot like real fried chicken and my brother used to actually always call the old carb version my KFC chicken, but it is actually baked! People always thought the chicken was fried instead of baked and I even had a few people that didn’t believe me that it wasn’t fried. While I have nothing against actual frying, it’s just so much easier to spread the pieces out on a tray, bang them in the oven and come back later to delicious baked chicken that tastes just like real fried chicken!
On our recent Bali trip, my son ordered some smoked chicken wings and fell absolutely in love with them! I had some too and they were really nice. They were really lovely and crispy though and it suddenly occurred to me as I was eating them that they might have flour on them. I asked and they did, so I stopped eating them, but my son loved them so much that I promised I would make a version once we got home. That’s what inspired this KFC Keto Fried Chicken!
I already had my old recipe in mind for this KFC Keto Fried Chicken and it’s one I’ve made since I was a teenager and that everyone really liked, but at some point I had stopped making it and forgotten all about it. But it came to mind immediately and I only had to use a few tweaks to make them completely low carb! They are really easy to make and use few ingredients, but taste really nice! And unlike chicken coated with almond meal or pork rinds, they don’t go really soggy on the outside once in the fridge, so you can make a huge batch and chill them for lunches and dinners throughout the week.
I used chicken drumsticks because my son really loves them but you can use wings, thighs, any pieces you prefer really! Be aware though that you may need to adjust the cooking time for different pieces. Chicken drumsticks also happen to be really cheap and I’m always looking for ways to save money with low carb food.
You might think looking at the ingredients that these few spices couldn’t possible taste anything like real KFC chicken, but amazingly they do. When I first did my old version back when I was a teen, sumac could only be found in specialty shops, delis and fruit and veg shops. But now it is readily available and can be picked up at your local major supermarket.
The coconut flour gives a great coating that is crispy as well as light and you don’t need much to coat the chicken with. In fact you will most likely have coating leftover in your bowl after you’ve removed your chicken pieces. You may also think the egg doesn’t seem like enough but trust me when I say it will be plenty and you’ll probably have some of that still leftover too!
My son loves taking this KFC Keto Fried Chicken in his lunchbox for school and the lack of nut flours makes them suitable for nut free schools. If your child attends an egg free school you can leave out the egg and the recipe will still work, the coating just works a lot better if you use the egg! They’re great even eaten cold and of course are portable and easy to take for work lunches too as well as picnics and outdoor gatherings!

KFC Keto Fried Chicken
Ingredients
- 1 kg chicken drumsticks
- 1 egg
- 1 tsp tamari soy sauce can sub with coconut aminos
- 1/2 cup coconut flour
- 1 tsp pepper
- 1 tbsp salt
- 2 tsp sumac
Instructions
- Whisk egg and tamari soy sauce in large bowl and add chicken. Toss to coat with egg mixture. In a second large bowl or a large zip lock bag add remaining ingredients. Mix until well combined. Add chicken and toss to coat with coconut flour mix.
- Place chicken on lined baking trays and spray generously with olive oil. Bake at 180C for 20 minutes. Turn and spray with more olive oil. Bake another 20-30 minutes. Serve.
