This Slow Cooker Chicken Cacciatore is based off a regular chicken cacciatore but using whole chicken and cream. It also uses my Homemade Passata which has basil, onion and garlic, so if you want to sub with regular passata you may need to add at least some garlic for flavouring.
You can serve this Slow Cooker Chicken Cacciatore on its own or with something like zucchini noodles or cauliflower mash. On its own was more than enough for us. My son was a bit unsure about this one but once I’d added the cream and thickened the sauce, it got his seal of approval. You can choose to leave the sauce as normal but it will be very thin. Just a small amount of xanthan gum thickens it up nicely and gives a nicer looking consistency.
This is all done in the slow cooker but you can choose to do it in a pressure cooker or a large pot if your slow cooker is too small or you prefer stove top. If you can’t fit it in your slow cooker you can halve the batch and make a smaller amount. Or quarter the chickens before cooking rather than after.

Slow Cooker Chicken Cacciatore
Ingredients
- 2 small whole chickens you can separate to fit in the slow cooker if needed
- 1 red capsicum/pepper, chopped
- 1 yellow capsicum/pepper, chopped
- 1 celery stick, chopped
- ½ quantity Homemade Passata
- 1 cup dry white wine
- ¼ cup black olives
- 3 medium mushrooms
- 1 ½ tbsp tomato paste
- 6 slices streaky bacon, diced
- 1 cup chicken bone broth can sub with chicken stock
- 2 bay leaves
- 1 cube garlic paste or 1 tsp minced garlic
- ¾ cup cream
- salt, to taste
- pepper, to taste
- ½ tsp xanthan gum
Instructions
- Add all ingredients except cream and xanthan gum to your slow cooker. Cook on high for 4-6 hours or low for 6-8 hours. If using a pot on the stove, simmer covered for approximately 2 hours, stirring occasionally.
- When ready, remove the chickens and cut each chicken into quarters. Season sauce with more salt and pepper if needed and add cream. Whisk until well combined.
- Serve chicken with veg and sauce poured over.
