This Caramel Buttercream was a bit of a frustration at first, but once I decided on trying the ingredients used here, I found it came out well on the first try. I started this as a Salted Caramel Buttercream and the inspiration came purely from having a bottle of AO Salted Caramel Almond Milk that I had bought with the intention of recipe testing and which was about to expire! And of course my incredibly frugal nature couldn’t allow that bottle to go to waste.
I tested this Caramel Buttercream so many times with the AO almond milk but the amount you could add before the mix would split, wasn’t enough to get a really good, strong caramel taste. After several attempts I abandoned the idea completely and was going to use a different flavour when I remembered these caramel flavoured Sweetleaf Sweet Drops I had bought and that I had yet to find a use for.
It turned out quite well and everyone really liked the taste, although I’m not a fan of caramel, I actually quite liked this buttercream too and it tasted even better when I paired it with my White Cupcake recipe. The two just really complemented each other!
You can use this Caramel Buttercream as a base recipe and change up the flavour using the other Sweetleaf Sweet Drops flavours or you could use things like regular flavoured stevia drops and essences instead. Just remember that you may need to adjust the amount of sweetener you add based on what flavouring products you use.
Caramel Buttercream
Ingredients
- 125 g unsalted butter softened
- 1 tbsp unsweetened almond milk warm
- 4 tsp icing mix/powdered sweetener
- 3 squirts Caramel Sweetleaf Sweet Drops
Instructions
- Place softened butter in a mixing bowl and beat with an electric mixer until pale and creamy. Add your almond milk and mix again. Add and mix in your caramel sweet drops. Add and mix in your powdered sweetener or icing mix, a teaspoon at a time.
- Use in place of regular buttercream in any recipe you like, such as my White Cupcakes!
