Bunless Burgers! Everyone’s always looking for the perfect replacement low carb bun, but do we really need a bun? Of course not! Don’t underestimate how awesome a burger can be without the bun. After all, the fillings are where all the good bits are!
I used to crave burger buns when I first started low carb, somehow a burger just didn’t feel like a burger if it didn’t have a bun. But after a while not only did I stop missing the bun, I started to really love and appreciate a burger with no bun. Just stack your burger on your plate the way you would in a bun and eat with a knife and fork. Or you could use leaf lettuce as a wrap and use it to hold the fillings!
My son is eating so many new foods including McDonald’s burger patties, so I wanted to make homemade burger patties for him. But he has a habit of deconstructing a meal and eating everything separately rather than altogether a lot of the time. So instead of making up the burgers beforehand, I placed all the filling options on the table so we could make our own with what we wanted. It’s a great fun way to eat as a family and it gave him the opportunity to put the fillings separately on his plate.
I love melted cheese on my burgers, but of course my son didn’t want his cheese ON his patty, he wanted it on the side. So I couldn’t melt cheese on all the patties. So I grabbed my blowtorch which I bought years ago for sushi making, but which had been collecting dust on the top of the fridge and used it to melt the cheese onto my patty at the table! It actually did a better job than melting it than under the grill like I usually do and my son was so intrigued by the blowtorch he decided he wanted some melted cheese after all, score!
Of course, if you don’t own a blowtorch, you can just get melty burger cheese by popping the patty and cheese under the grill the old fashioned way. But I really do like being able to assemble the burgers at the table, everyone can choose what they like for their burgers and make their own. Also this type of eating as a family is a tool commonly used to get fussy kids eating new things and I can tell you from experience it works!
Bunless Burgers
Ingredients
- 1 kg beef mince/ground beef
- 8 strips streaky bacon
- 10 eggs
- 2 avocadoes, peeled and sliced
- 8 slices onion
- 250 g mushrooms, sliced
- 8 slices tasty/cheddar cheese
- 1 1/2 cups Homemade Mayo
- 8 cups mixed lettuce or lettuce of choice
- 2 tbsp olive oil
- 2 tbsp ghee
- salt
- pepper
Instructions
- Preheat oven to 200C. Place bacon strips on lined baking trays. Bake in oven about 12-15 minutes or until cooked to your liking.
- Meanwhile place beef mince in a large bowl with two eggs and season with salt and pepper. Mix with your hands until well combined. Separate and roll into 8 equal balls of meat.
- Heat ghee and olive oil in a large frying pan. Take meatballs and flatten into patties and add to pan in batches. Cook until nicely coloured and cooked and then flip and cook on the other side.
- Once you’re about halfway through making the hamburger patties, heat some butter in a second frying pan and start frying the eggs. Cook them to your liking, I like them sunny side up!
- Once the burger patties are done remove from the pan and add in the onions, cooking in the fat from the burgers. Stir frequently until coloured and cooked. Remove and do the same with the mushrooms.
- Either place your cheese slices onto your hamburger patties and melt under the grill or you can blowtorch them at the table like we did! To assemble the burgers, place a handful of lettuce, add a patty with melted cheese, bacon, egg, mushrooms, onion and then top with mayo. Place avocado slices on the side of your burger. Or assemble them as you like!

Very tasty! Actually really prefer bunless burgers now, although a low carb bun sometimes is good too!
