Ice cream has always been an all-time favourite as I love cold foods and there was always something that seemed incredibly magical and appealing about an ice cream cake as a child, that stayed with me even as I grew up. There was the whole putting it together and then the challenge of serving and getting it eaten before it melted everywhere!
This Sugar Free Neapolitan Ice Cream Cake is very simple and is like the basic Neapolitan style ice cream that’s been around forever, except in wondrous cake form. I’ve done this very basically but you can always use different ice cream flavours to change it up and add decorations or things like homemade dark chocolate sauce to make it even more fun. The strawberry colour in the strawberry ice cream is very pale and subtle but if you really want it to pop, you can add some pink food colouring to the ice cream mix to make the strawberry layer stand out even more.
If you eat keto and love ice cream, I highly recommend investing in an ice cream machine so you can make keto ice cream or recipes like this Sugar Free Neapolitan Ice Cream Cake for yourself whenever you like. Mine is the kind with a compressor so it churns and freezes the ice cream all at the same time, without the need for a freezer bowl chilled in advance. These machines can be expensive but if you shop around you can find some pretty good prices available. Otherwise you can go for one with a freezer bowl that is much lower in price, I highly recommend the Cuisinart for the cheaper freezer bowl variety.
This Sugar Free Neapolitan Ice Cream Cake not only has no sugar or grains, it’s also incredibly filling due to the real cream and natural fat content, meaning just a small amount will leave you very full and satisfied. This Sugar Free Neapolitan Ice Cream Cake is fantastic for parties, birthdays or other special celebrations and any leftovers are easily stored in a container in the freezer.
Just remember that the Sugar Free Neapolitan Ice Cream Cake will harden more in the freezer. The xylitol sweetener and vodka are absolutely key, to keep the ice cream from freezing rock hard. Any other sweetener will not act the same way as xylitol for ice cream. The vodka helps as well to keep the Sugar Free Neapolitan Ice Cream Cake from crystalising and freezing too hard. The amount of alcohol is small and can’t be tasted, so this recipe is still suitable for children. There are some alternatives to vodka such as vegetable glycerine and xanthan gum, but vodka is the most easily accessible.
Lastly if you don’t have an ice cream machine, don’t worry, you can still make this Sugar Free Neapolitan Ice Cream Cake and all my ice cream recipes by simply whipping the ingredients with a stick mixer or similar and then freezing in a suitable container until ready to eat.
Sugar Free Neapolitan Ice Cream Cake
Equipment
- Ice Cream Machine
Ingredients
- 1 quantity vanilla ice cream
- 1 quantity strawberry ice cream
- 1 quantity chocolate ice cream
Instructions
- When making the different ice creams, add only ONE tablespoon vodka
to each batch of ice cream instead of 1 ½ tablespoons. This is to give
you a firmer ice cream and make it easier to turn the ice cream out of
the tin. Line the bottom of a spring form cake tin with baking paper. - Make vanilla ice cream first according to recipe and layer the bottom of
the cake tin, spreading the ice cream evenly with the back of a spoon
or similar. Cover with plastic wrap and place in the freezer. Make the
strawberry ice cream and repeat, layering on top of the vanilla. Make
chocolate ice cream last and layer on top of the strawberry. Cover well
with plastic wrap and freeze overnight. - Remove from freezer and let sit out for a few minutes. You don’t want it
to get melty but you want it to soften VERY slightly so you can pull
away the tin without taking the ice cream with it. - Turn upside down onto a platter or similar and open the spring form very
carefully and slowly. Carefully pull away the side part of the cake
tin. Once you’ve got the side part off, it should be very easy to pull
off the bottom of the tin off the top of the cake. Cut into slices and
serve.
