This Lemon Butter Chicken turned out so much better than expected with the butter and cream making a lovely sauce that was nice and thick. I literally was just grabbing things I had on hand and adding them in as I went, I really didn’t have a clear idea of this recipe when I started.
But sometimes I really love what a great recipe you can get when you just wing it! The flavours in this all went really well together and I honestly wasn’t expecting such a thick sauce as what I got! This Lemon Butter Chicken would go really well with Cauliflower Mash for a hearty meal or salad for something lighter.

- Season chicken thighs with salt and pepper. Heat and melt butter in large frying pan and fry chicken thighs. Remove and set aside.
- Add lemon juice, parsley and cream. Whisk until well combined. Season salt and pepper. Add back chicken and turn to coat. Serve.
