This is my most used paste, I use it in place of fresh garlic in almost everything! Like my Basil Paste and Ginger Paste, this Garlic Paste was created to replace the fresh paste that came in the refrigerated tubes. I loved using them and they were very convenient, especially the herb ones since fresh herbs can go off so quickly. But when I read the ingredients and saw the nasties in them, I couldn’t bring myself to use them anymore.
So I created this Garlic Paste to replace the one I loved. This paste is made fresh in a bulk amount, frozen in ice cube trays and then popped out and stored in a zip lock bag in the freezer. Throw them into the pot and pan straight from the freezer or if needed just leave out a short time for the cubes to defrost into ready to use Garlic Paste!
Garlic Paste
Ingredients
- 1 kg garlic cloves
- 20 tbsp light taste olive oil
Instructions
- Blitz garlic cloves in 250g batches (4 batches altogether) in a food processor or chopper. Push down any bits on the sides down with a spoon and blitz again. Add 5 tablespoons oil per batch and blitz until it makes a smooth paste.
- Place heaped teaspoons of garlic paste in ice cube trays and cover with plastic wrap. Freeze until firm and pop cubes out. Fill zip lock bags with garlic cubes and store in the freezer until needed.
- For cooked dishes you can throw the cubes directly into the pot or pan and they will quickly melt down. For raw dishes such as mince mixtures or marinades, just set a cube out to defrost before adding to your dish.
