After a long stint in Bali where I found great keto food but had a few cheats that left my stomach cursing at me, it’s a relief to get back to home cooking and strict keto food. This recipe is very quick and easy, with the low carb love, bacon! My son LOVES bacon now, so it will be showing up in many more future recipes!
Bacon, Onion and Sundried Tomato Rissoles
Ingredients
- 500 g beef mince/ground beef
- 500 g veal mince/ground veal can sub with pork or more beef
- 1/2 onion, diced
- 4 cubes basil paste or 4 tbsp chopped basil
- 4 slices streaky bacon, diced
- 4 large sundried tomato pieces, finely chopped
- 4 cubes garlic paste or 4 tsp minced garlic
- 4 tbsp olive oil
- 100 g butter
Instructions
- Combine all ingredients except olive oil and butter and season with salt and pepper. Mix well. Divide into 8 balls and flatten into rissole shapes.
- Heat half the olive oil and butter in a large frying pan and fry half the rissoles on a low heat until golden and nicely coloured on both sides. You need to make sure they cook through in the middle. If you’re worried, don’t make the rissoles too thick.
- Repeat with remaining butter, olive oil and rissoles. Serve with side of your choice.
