These Prawn Skewers are incredibly easy to make. They are marinated in coconut cream with Thai flavours and if you like you can reserve some of the marinade to make a sauce for the Prawn Skewers for some extra added fat, although I like to serve them with a flavoursome salad instead like my Thai Salad or Thai Zoodle Salad!
These are really fun for kids to eat and good for guests because they look impressive but are so easy to make! My son was really excited to help me make these and wanted to thread the prawns on the skewers himself. In the end though he settled for helping me do it and had a lot of fun!
Prawn Skewers
Ingredients
- 12 large shell on prawns
- 400 ml coconut cream
- 1 medium spring onion/shallot/scallion, sliced
- 1 Thai red chilli, sliced
- 2 tbsp fish sauce
- 2 kaffir lime leaves, finely sliced
- 1 lime, the juice
- 1 tbsp coconut oil
Instructions
- Combine all ingredients except prawns in a bowl or container and mix well. Add prawns and mix in. Cover and refrigerate 2 hours or overnight if time permits.
- Thread prawns onto skewers. Heat coconut oil in a frying pan, fry prawn skewers for about 2 minutes on each side.
