This used to be a favourite dish I often made as a teenager but hadn’t done in about ten years. I’d actually forgotten all about it until recently and decided to try making it again. It actually turned out so much better than I remember with the marinade creating a nice thick glaze.
This is very flavoursome so I serve it with just a simple salad. There is plenty of fat in the meat and in the salad dressing. I usually just dress with extra virgin olive oil but you can add vinegar or other flavourings if you like or a different dressing completely. Just note the carb count!
Ginger Pork Chops
Ingredients
- 4 boneless pork loin chops
- 2 cubes ginger paste or 2 heaped tsp ginger paste
- 1/4 cup tamari soy sauce sub coconut aminos for paleo
- 1/4 cup dry white wine
- 120 g leafy salad mix
- extra virgin olive oil
Instructions
- Combine ginger, tamari and wine and mix well. Add pork and coat well. Cover and refrigerate for 1-2 hours.
- Heat a frying pan over medium high heat. Add pork and marinade and cook until pork is cooked and coloured on both sides and marinade has thickened and created a nice glaze.
- Serve with leafy salad drizzled with olive oil.
