A pretty simple throw together meal that is like Bolognese with a bit of a twist using lamb and feta. This recipe uses my Homemade Passata recipe but if you use store bought passata you will need to add some more flavours like garlic, onion, basil etc. so you don’t get a bland tasting dish.
I usually use zoodles for these sort of recipes but was feeling lazy when I made this, so made zucchini fettucine which I sometimes do when I can’t be bothered getting the spiraliser out! You can of course use zoodles if you prefer.
Zucchini Fettucine with Lamb, Spinach and Feta Sauce – Serves 4
500g lamb mince
4 zucchini
2 tbsp olive oil
50g butter
1/2 quantity Homemade Passata, get the recipe here
200g feta crumbled
Salt and pepper
120g baby spinach
Heat oil and butter in a pot over medium high heat. Add lamb mince and brown lightly. Add passata and bring to the boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Season with salt and pepper. Add spinach and feta, stir through and cook until spinach is wilted.
Spiralise zucchini for zoodles or cut fettucine style strips with a vegetable peeler. Just do the firm outside flesh of the zucchini and discard the seed part. Arrange fettucine on a plate and top with lamb sauce. Serve.
