This is a really basic Thai Salad using bagged leafy salad mix, bean sprouts and Thai flavours. Easy and quick to throw together and goes really well with lots of different proteins!
The flavours in this salad are so beautiful and fresh, salads taste so good to me now, it’s amazing how much this way of eating changes your taste buds. I didn’t mind salads before but definitely wouldn’t have gotten excited over something like this. Now I could just sit with a bowl of salad like this one and eat it right out of the bowl on its own!
Thai Salad
Ingredients
- 120 g bag leafy salad mix
- 250 g bean sprouts
- 3 tbsp fresh Thai basil leaves, torn
- 1/2 bunch fresh mint leaves, torn
- 1 Lebanese/Persian cucumber, deseeded cut julienne style
- 1 thumb sized piece fresh ginger, peeled and cut julienne
- 1 lime, the juice
- 1/4 cup light taste olive oil
- 1 Thai red chilli, sliced
- 1/2 tsp sesame oil
- 1/2 tsp sweetener
Instructions
- Combine salad mix, bean sprouts, Thai basil, mint, cucumber and ginger in a large bowl. Mix together olive oil, lime juice, sesame oil, sweetener and chilli and pour over salad. Toss to mix through.
