I used to love buying those tubes of herb pastes, particularly basil, which I use a lot in my son’s favourite sauces. I hated that whenever I’d buy fresh basil I’d never use it all up or it would go off really quickly. At nearly $4 a bunch, that was a lot of money ending up in the bin. Buying the paste tubes meant lots of savings as well as basil whenever I needed it that would keep for months.
But then one day I actually read the back of the tubes I always bought and was shocked at the amount of added ingredients including sugars, grains and seed oils. So I created this basil paste to use so I could keep having my basil on hand without all the added nasties!
These are kept in the freezer rather than the fridge but are still the same to use. For cooked food, just chuck a cube in the pot or for something that requires a bit of fresh mixed in, just set out a cube to defrost.
Homemade Basil Paste
Ingredients
- 3 large bunches fresh basil
- 6 tbsp light taste olive oil
- 1 1/2 tsp salt
Instructions
- Pick basil leaves and place in a food processor or chopper. Add oil and salt and blitz until finely chopped. If you can’t fit it all at once, you can do one bunch at a time and divide the oil and salt between them.
- Place heaped teaspoons into an ice cube tray. I use ice cube trays with silicone bottoms so the cubes pop out easily. Cover with plastic wrap and place in the freezer until set.
- Pop out the cubes and place in a zip lock bag. Return to the freezer and grab a cube whenever you need one. 1 cube of basil paste should be close to 1 tbsp of chopped basil.
