Chicken Caesar Salad is such an ultimate low carb meal. I usually reserve it as a treat for when I go out because there are so many restaurants and cafes that have it on their menu. Usually all you have to ask for is no croutons and you’ve got a great low carb meal! It also takes out a lot of the guesswork when trying to decide what to eat when at a restaurant, which at times can be really hard and stressful.
But you can’t beat a homemade Chicken Caesar Salad! It’s a meal in itself that is low in carbs with plenty of good healthy fats. Or you can leave out the chicken and serve it as a side. It’s also great to serve to guests or take to parties because everyone loves a Chicken Caesar Salad and you won’t have to compromise on your good quality low carb food!
You can also adapt it and throw in different kinds of things depending on what you have on hand. The Chicken Caesar Salad pictured, there was some leftover pieces of gourmet cheese, a mild blue cheese and one that I didn’t actually know the kind, but it tasted good! So crumbled them up and threw them in along with everything else. If there’s an ingredient you don’t like, leave it out. If there’s something you love, chuck it in!
Chicken Caesar Salad
Ingredients
- 3 baby cos lettuce, chopped
- 12 slices streaky bacon, cooked and chopped
- 4 eggs, hard boiled and chopped
- 250 g shaved parmesan cheese
- 500 g shredded cooked chicken
- 2 cups homemade mayo
- 4 anchovies, finely chopped
- 1/2 lemon, the juice
- salt
- pepper
Instructions
- Mix mayo with anchovies, lemon juice and season with salt and pepper to make dressing. Combine all other ingredients, add dressing and toss. Serve.
