I’ve made a couple of Fathead Burgers now but I wanted to make one using fish since my mum is a pescatarian (vegetarian that also eats seafood). Of course there was no question that the fish should be salmon, particularly as I wanted to mainly rely on the flavour of the fish alone without crumbing it like you get in most fish burgers.
My Fathead Salmon Burger uses fresh cooked salmon, leafy salad greens and a good helping of my Homemade Tartare Sauce. Simple but incredibly tasty and filling! My Fathead Burger Buns are used again here to make a burger that is completely compliant and also tastes great!
Fathead Salmon Burger – Serves 4
2 quantities of Fathead Burger Buns, get the recipe here
4 small salmon fillets
2 cups leafy salad mix
4 tbsp Homemade Tartare Sauce, get the recipe here
100g butter
Salt and pepper
Make Fathead Burger Buns according to recipe. These can be made well in advance if you like. Season the salmon with salt and pepper. Heat butter in a frying pan over medium high heat. Add salmon, skin side down and cook until skin is browned and crispy. Flip and cook on the other until also nicely browned.
Top 4 halves of the Fathead Burger Buns with leafy salad. Place a salmon fillet on each Fathead Salmon Burger, top with a tablespoon of Homemade Tartare Sauce each and then finish with the remaining Fathead Burger Bun halves. If you like you can insert a skewer through the middle to hold the Fathead Salmon Burgers together. Serve.
