Cauliflower Rice is another great low carb staple and an ideal stand in for regular rice. When I first started out I really missed rice with things like curries and stir fries. It wasn’t so much the taste, it was having something to soak up that sauce the way regular rice used to do. Cauliflower Rice does that perfectly and can really help if you’re missing your rice.
One thing however is that it can be incredibly messy to make! I know I always end up doing a lot of clean up after I make Cauliflower Rice! That’s why I decided to start making my Cauliflower Rice in bulk so that I could cut down on mess, work, save time and always have Cauliflower Rice on hand.
This method will show you how to make a bulk batch you can store in the freezer for whenever you need some.I portion it out into individual ziplock bags so all I need to do is just grab a bag from the freezer whenever I need it. Each bag holds approximately 2 portions of cauliflower rice.
I always cook mine up in a frying pan with some olive oil, about 5 minutes and your Cauliflower Rice is ready. It’s easier if you defrost the Cauliflower Rice beforehand but if you’ve forgotten you can put the frozen Cauliflower Rice into your frying pan and break it up as you go or defrost in the microwave. You will need to cook it for longer though if you use it frozen. This Cauliflower Rice goes great with my Thai Green Curry Chicken!
Ingredients
- 3 large heads cauliflower, trimmed
- sandwich size zip lock bags
- olive oil
Instructions
- Break cauliflower up into florets and process in the food processor in batches until it resembles rice grains. transferring the riced cauliflower into a large bowl as you go.
- Transfer the riced cauliflower into a large bowl as you go.
- Place handfuls of cauliflower rice into zip lock bags, making sure you pack the rice down into the corners. When the bag is nice and full, try and get out as much of the air as you can and seal it.
- I got 11 bags of cauliflower rice each with different weights but an average of about 270g or 9 1/2oz per bag. This is enough for 2 people. Freeze the cauliflower rice and grab a bag when you need one.
To cook:
- Defrost a bag of cauliflower rice or if you’re in a rush, you can use the rice frozen in the pan and break it up as you go along. Defrosting in the microwave is quick and easy.
- Heat 2 tablespoons of olive oil in a frying pan and add cauliflower rice. Cook stirring frequently for about 5 mins. If using frozen rice, stir and break up the rice completely in the frying pan and then cook for a further 5 minutes, stirring frequently.
- Serve with your favourite dishes you would normally have over regular rice.
