I had heard of pizza burgers and thought it sounded like a great low carb food. The only real problem with burgers are the buns, so these use my Fathead Burger Buns to cut out the grains. The burger is a beef patty with pizza toppings and really does have a pizza taste to it! These are slightly higher carb but for a version much lower in carbs, use my Oopsie/Cloud Bread for your buns.
Fathead Pizza Burger – Serves 4
2 quantities Fathead Burger Buns, get the recipe here
500g beef mince
1 egg
2 tsp dried rosemary
2 tbsp tomato paste
8 slices salami
8 fresh basil leaves
4 tbsp shredded mozzarella
120g fresh mozzarella
2 tbsp homemade mayo, get the recipe here
Olive oil or coconut oil for frying
Salt and pepper
Combine beef mince, egg, rosemary, salt and pepper in a bowl. Divide into 4 balls and make patties. It’s okay to make the patties a bit bigger than the buns, they will shrink when you fry them. Fry patties in a frying pan until nicely browned and cooked on both sides. Top each with ½ tbsp. tomato paste, 2 slices salami, 2 basil leaves and 1 tbsp shredded mozzarella.
Place under the grill until cheese is melted and golden. Meanwhile spread 4 bun halves with ½ tbsp mayo each. Place patties on other bun halves, top each with ¼ of the fresh mozzarella and place the mayo bun halves on top. Serve.
