I never eat breakfast but I love breakfast foods, so a good old fashioned fry up is a treat that is both quick and easy as well as being a great low carb meal. You can vary what you put on your plate according to your tastes but this is my favourite fry up. Sometimes I will add some wilted spinach also. The radishes are a great replacement for fried potatoes and if you have never had fried radish I strongly suggest you try it. It tastes completely different to raw and I have given it to people who have said they would never in a million years have guessed it was radish. Most think it really is potato!
Breakfast Fry Up – Serves 1
2 eggs
3 strips streaky bacon
3 radishes, halved and sliced
2 medium mushrooms, sliced
3 slices haloumi
1 avocado, mashed
2 tbsp pork fat (or no taste coconut oil)
Bake bacon on tray in oven at 200C for about 12 minutes. While the bacon is cooking, slice the radishes and mushrooms. Mash the avocado and set aside.
Heat a frying pan over high heat. Melt and heat 1 tbsp pork fat and fry the sliced radishes. Remove to plate, set aside and add mushroom. Fry, remove to plate and set aside. Melt remainder of pork fat and crack in and fry eggs. Remove to plate and add haloumi slices. Fry just a few minutes on each side and remove to plate. Add bacon on the side and your mashed avocado on top. Serve.
