A great low carb meal, these little sandwiches use beef mince as the ‘bread’ with a spinach and cheese filling. With a dollop of homemade mayo on the side, these sandwiches are highly addictive. I think I made them about 4 times in one week the first time around! They are adapted from Cookist.
You can vary the fillings according to your tastes, I like using the spinach and cheese since there’s already meat on the outside and it reminds me of spinach and cheese gozleme a little bit, which I miss very much! I now have a Fathead Spinach and Feta Gozleme as well as lots of other gozleme recipes!
Beef Mince Sandwiches – Serves 4
500g beef mince
1 egg
3 sprigs parsley, chopped
1 clove garlic, minced
Salt and pepper
250g finely chopped silverbeet/spinach
150g shredded mozzarella
1 dollop of homemade mayo, get the recipe here
Olive oil or coconut oil for frying
Combine mince, egg, parsley, garlic, salt and pepper. Divide in half. Shape one half into a rectangle. I use a small sized rectangular baking tray, lined with baking paper, to make shaping easier. Top with chopped spinach and mozzarella. Cover with other half of mince, also shaped into a rectangle. Slide the baking paper with the mince on top, onto a board or counter. Cut into 8 triangles. Fry in oil in a frying pan until browned and cooked on both sides. Serve with some homemade mayo as a dipper.
