After making my Fathead Pizza Pinwheels, someone suggested that the recipe might be good for vegemite and cheese scrolls. The thought had never occurred to me since I actually hate vegemite, but there a few household members that love it and I always have vegemite on hand thanks to my son, so decided to try them out.
They certainly don’t look as nice and neat as the Pizza Pinwheels and I can’t give you a personal assessment on their taste unfortunately, but I am assured by the vegemite eaters that they’re really good! And if like me you don’t like vegemite or you’re put off by the fact it isn’t totally compliant, I would highly recommend the completely compliant and natural product Everymite!
Fathead Vegemite and Cheese Scrolls – Makes 16
200g cream cheese
1-2 tbsp vegemite, depending on how much you like
1 ½ cups shredded tasty or cheddar cheese
1 egg, beaten
½ tsp garlic powder
Salt to taste
Make Fathead according to recipe adding salt and garlic powder. Roll into a square shape. Cut the cream cheese into big cubes and soften in the microwave about 40 seconds.
Place the cubes over the Fathead and then use a spoon to smooth the cream cheese over the Fathead, similarly to smoothing sauce on a pizza base. Soften the vegemite in the microwave, about 30 seconds, it will be much easier to work with. Spread that over the cream cheese with the back of a spoon too. Sprinkle with shredded cheese. Turn the Fathead so one of the shorter edges is facing you and use the baking paper to roll it up tightly, peeling the paper off as you go. Once it’s all rolled up cut slices about 1cm thick. Place carefully onto trays lined with baking paper. Brush the tops lightly with egg wash and make sure to brush the sides of the actual pastry. Bake at 180C for approximately 12 minutes. Let them cool off before eating as they are very soft and fall apart easily. Serve warm or at room temperature.
