There are so many homemade mayo recipes that say they are super easy and no fail. These involve putting the oil and egg in all at once. I’ve successfully made this several times, but every now and then, the mayo will split, forcing me to take more time to ‘save’ it and creating more mess to clean up. After a while I decided to do it this way. It’s much easier, has literally never failed me and it really only takes a few minutes longer than if you put all the oil in at once. I’m happy to spend a few extra minutes to make sure my mayo turns our perfect each time!
Why make your own mayo? Several reasons. First of all, it tastes delicious and is really fun. You can create all different flavours of mayo to go with your meals. But the number one reason is you can make mayo that is free of seed oils, sugar and other nasties. It doesn’t taste exactly the same as store bought. I was actually unsure of it at first. But after a few times of having it, I was hooked! I now love mayo about 100 times more than before and think homemade tastes so much better. I could eat it with a spoon, it’s that good!
This Homemade Stick Mixer Mayo uses light taste olive oil but if you’re wanting something different and more neutral, oils like macadamia oil, avocado oil and mild taste liquid coconut oil are all good options, but more expensive.

- Crack egg into a small jug or the container that came with your stick mixer. Add salt and pepper. In another pouring jug, place olive oil. Place stick mixer over egg yolk and turn on. Pour and add in oil a little bit at a time, mixing and incorporating as you go. It will look thin at first but will start to thicken pretty quickly and get thicker and thicker the more oil you add. Don’t just stir the stick mixer, move it up and down like you’re stamping on the mixture so that it emulsifies properly.
- The thicker it gets the more oil you can add at once. When you’ve added about ¾ of your oil it should be very thick. At this point you can dump in the rest of the oil and incorporate it.
