My whole life I grew up eating pizza pinwheels, first made by my mum and her friend and then made myself from when I was a kid. The original version used puff pastry and bottled tomato sauce, but these are free from grains, sugars and other nasties. And they taste even better!
They’re a brilliant snack or main meal and make a great addition to party tables. Non LCHFer’s will never be able to tell that these are completely grain free!
Fathead Pizza Pinwheels – Makes 16
1 quantity Fathead with coconut flour – get the recipe here
200g cream cheese
2 tbsp tomato paste
200g ham, diced
1 ½ cups tasty or cheddar cheese, shredded
1 egg, beaten
1 tsp garlic powder
Salt to taste
Make Fathead according to recipe adding salt and garlic powder. Roll into a square shape. Cut the cream cheese into big cubes and soften in the microwave about 40 seconds.
Place the cubes over the Fathead and then use a spoon to smooth the cream cheese over the Fathead, similarly to smoothing sauce on a pizza base. Add tomato paste and smooth that out over the cream cheese. Sprinkle ham evenly over the dough and then top with the shredded cheese.
Turn the dough so that one of the shorter edges is facing you. Use the baking paper to roll the dough up tightly, peeling the baking paper off as you go. Once the dough is all rolled up, use a sharp knife to VERY carefully cut the log into slices about 1cm thick. If you cut too fast or press down too hard you can break the dough very easily. You should get approximately 16 slices.
Carefully place the slices onto a tray lined with baking paper. Lightly brush the tops of the pinwheels with the egg and make sure to brush the sides of the actual pastry too.
Bake in the oven at 180C for 12 minutes or until golden. Serve.
