Cheeseburger in a pie with a bacon crust? How awesome can you get? This pie is so quick and easy to make and looks really impressive. This is a slight rehash of a recipe from SoDelicious that had some sugars and was a bit bland for my liking, so I added some more flavours and ditched the sugars. The result is this awesome pie. I highly recommend serving it with homemade coleslaw. The two go really well together!
Bacon Crust Cheeseburger Pie – Serves 6
16 streaky bacon rashers
500g beef mince
½ red capsicum, sliced finely
½ yellow capsicum, sliced finely
1 onion, sliced finely
100g mushrooms, sliced
250g shredded mozzarella
1 clove garlic, minced
1 tsp paprika powder
Salt and pepper to taste
2 tbsp tamari soy sauce or coconut aminos
4 drops stevia glycerite
1 tbsp olive oil
Saute onion, red and yellow capsicum and mushrooms in olive oil until soft and cooked. Grease and line a pie dish with baking paper. Layer the bacon in a circle around the dish so the bottom and sides are covered to make the bacon crust. Let the excess hang over the sides of the pie dish.
Mix together mince with spices and garlic and put on top of bacon to make the filling. Top with mozzarella cheese and cover cheese with sautéed vegetables. Bring the bacon up and over the top of the pie, one strip at a time to cover the top.
Mix tamari or coconut aminos with stevia glycerite. Brush the top of the bacon with the marinade. Bake at 220C for 35-45 minutes until bacon is cooked and nicely coloured. Cut into slices and serve. Goes great with coleslaw.
