Chicken Laksa is a great dish but the main problem is the noodles and the Asian condiments, which can have a lot of sugar and seed oils. With this Chicken Laksa which is adapted from MyRecipes, konjac noodles are used and the condiments are sugar and seed oil free. Check out the photo below the recipe to see which ones I used. Whether you use condiments with seed oils or sugar is a personal choice, I do allow for some when I can’t find a compliant option.
The Chicken Laksa can also be very spicy depending on how many chillies you add, so be careful and don’t put more than you think you can handle. Also remember you will be adding more chilli to the dish when you eat in the form of the sambal chilli paste. Mine was VERY hot and although I enjoyed it, it may be too hot for some!
Chicken Laksa – Serves 6
2 tablespoons coriander seeds
1 teaspoon black peppercorns
1 teaspoon cumin seeds
1 teaspoon fennel seeds
4 cloves
1/4 teaspoon ground turmeric
5 dried birdseye chillies, stemmed (add chillies according to taste)
2 lemongrass stalks
3 tablespoons coconut oil
1kg chicken thigh fillets, diced
1 teaspoon shrimp paste
3 shallots, sliced
1 400ml can coconut cream
1L chicken stock
3 teaspoons salt
1 cinnamon stick
150g bean sprouts, rinsed
3 250g packets konjac noodles
1/3 cup fresh mint leaves, torn
1/3 cup fresh cilantro leaves, torn
Lime wedges to serve
Sambal oelek chilli paste to serve
Take dry spices and chilli with the exception of the cinnamon and mill to powder. Peel the outside of the lemongrass and discard, then pound in a mortar and
pestle.
Heat coconut oil in a wok and stir fry chicken, shrimp paste, shallots and milled spices for a few minutes. Add coconut cream, stock, salt, cinnamon and
lemongrass. Cover and simmer for about 20 minutes. Discard the cinnamon and lemongrass.
Drain and rinse konjac noodles really well under hot running water. Drain again. Add sprouts and noodles to bowls. Add soup and garnish with your fresh herbs
and lime wedges with sambal oelek on the side.
